Samba, Mambo……SALSA!!!

So it’s been almost 4 weeks since my last post.  I promised myself when I started this blog six months ago, that I would post every single week, so I am apologizing to myself, and to Sandy Gist, who keeps asking me for a new dip!

The past month has been a whirlwind, I cannot even believe that it’s over! I went to the NY office for a week, which I always love, followed by the wedding of an old friend in Ct, and then to Brazil for work (and fun of course).  All that being said, I had to come up with a dip this week that contained ZERO calories, since I ate my way through the past 4 weeks, and 2 continents.  At the end of my last post I said my next post was going to be from a very special guy, and it’s Don, my mom’s husband.  He made the suggestion, and when I looked at it, it said 16 calories….DING DING DING  we have a winner. So, thank you Don for giving us a good, flavorful, and exciting, dare I say “diet” dip.

Run don’t walk to the grocery store to make this, and put it on everything you can find!

INGREDIENTS

FULL INGREDIENTS

2 cups finely chopped seeded peeled cucumber (MAKE SURE ALL THE WATER IS OUT, YOU DON’T WANT SOUPY SALSA)
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 Tbsp minced fresh parsley
1 jalapeno pepper, seeded and chopped
4-1/2 tsp minced fresh cilantro ( I LOATHE CILANTRO SO I LEFT IT OUT)
1 garlic clove, minced or pressed
1/4 c reduced-fat sour cream
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 tsp seasoned salt

DIRECTIONS

In a small bowl, combine the first seven ingredients.

           CUKE IN MINI CHOP ONION IN MINI CHOP MIX IN BOWL

In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt.

                                               SOUR CREAM DRESSING

Pour over cucumber mixture and toss gently to coat.  They say to serve this immediately, so what I did was combine all the ingredients in 2 bowls, and bring the “dressing” over to my friends, and put it together there.  I am sure that it would have been fine, but I didn’t want it to be soggy.  I am guessing (there was none left) that this wouldn’t keep for very long in the fridge.

DIPPABLES

I got the crunchiest tortilla chips I could find, and they combined with the coolness of the dip was the perfect combo.  Honestly though, this could be a topping for fish, salad, actually could be a side dish on its own.  This is a wonderful addition to a summer party.
